Yummy yogurt, cucumber, tomato and onion salad I adapted from Julie Sahni’s Classic Indian Cooking. She suggests mixing yogurt w/sour cream to get a creamier consistency (3 parts yogurt to 1 part sour cream). I chop my cucumbers, tomatoes, and onions and add them to the mix of yogurt, sour cream, plenty of cumin and a little salt. YUM! It fills me up, provides 1-2 servings of veggies (depending on how much you put in), gets me plenty of protein to last till dinner, and calcium to boot! I wish I had a whole wheat pita to round my meal out more…
